Obviously, I clicked out of there quickly, but I was completely in shock! My June goals are to recoup from gallbladder surgery and follow WW CORE plan. I'm not up to road cycling just yet, but I want to re-start that probably in a week or so...depending on what the doc says.

Yeah!! We've reached mid-year, y'all!! I think that is very exciting!

Paige--Checking In!

Once again, I'm in it this month!

Goal for April is to stick to WW Core for the entire month. Basically, this is to get me back in the habit of looking at food.....as opposed to just eating whatever I "THINK" is healthy.

Current stats have me at 160.00.... so 7 pounds lost since January! WHOOP!

Laptop Lunchbox

Hey y'all,

Some have already stumbled across my newest posting, but the laptop lunchbox came in this weekend and was put to its first Paige test. I did a quick review for those interested.

Also, I got the 'Laptop Lunch Times', their online newsletter and they mention that prices of the lunch system will be going up soon, so now might be a time to get for the cheaper price.

Paige's February Intro

Hey y'all!

I'm Paige, I was part of the January Challenge and had a LOT of fun with it. I'm 25, a shortie at 5 ft tall. I live in Central Texas with my adorable mini-schnauzers Paxil & Porter. I have been on the whole "change of lifestyle" journey since 2004, I've managed to go from 192 to 156-ish. The past 5 pounds were directly related to the January Challenge!

Goals for February:
1. Continue 4 x's weekly exercise (January Goal)
2. Cut caffeine out of my life
3. Eat out only 2x's weekly (one dinner and one lunch)
4. Start weeding out sugar in preparation for Lent (Feb. 21)

Although my blog is primarily a weight loss one, know that I do suffer from OCD w/panic attacks and do talk about it freely. I have a pretty good sense of humor about all of this-hence naming a dog after an anti-anxiety med:-). With most of my life, I find writing about it helps me deal with it head on, so if you have any questions feel free to comment at my blog.

Ok, Challengers, let's rock this!

Lighten-up secrets: 20 tips to make any dish healthier

When it comes to making food delicious and light, our test kitchens professionals have learned all the tricks. Here, they share some of their tried-and-true techniques for making dishes more nutritious without sacrificing an ounce of flavor.
For all recipes
1. Study the recipe. Closely examine the original to see where changes can be made. "You can't just wing it, no matter how familiar you are with the recipe," says Test Kitchens Professional Kathryn Conrad. "Look at each ingredient to see where you can take away, add, or substitute."
2. Reference lightened versions of similar recipes before starting. Check out past issues of Cooking Light, cookbooks, or visit CookingLight.com.
3. Limit sodium. Try the recipe with half the recommended sodium.
4. Reduce portion sizes. When plating, start with a smaller amount and see if that satisfies you.
5. Give yourself some slack. "We try different versions of the same recipe three or four times," says Test Kitchens Professional Jan Moon. "Recipes are a science; you may need a few attempts to get it just right."
For toppings
6. Choose a flavorful cheese. "Use a variety with more flavor, such as Parmigiano-Reggiano," says Assistant Food Editor Kathy Kitchens Downie, R.D. "The stronger the flavor, the less you have to use."
7. Sprinkle cheese, chocolate, or nuts on top rather than mixing into batters. As toppings, they deliver concentrated flavor.
8. Reduce sugar-crumb toppings. Half the amount is often enough.
9. Substitute panko, extra crisp Japanese breadcrumbs, for ordinary bread or cracker crumbs. Doing so can reduce the crust's fat, calories, and sodium by half.
For baked goods
10. Think beyond fat-free. Sometimes no-fat foods don't satisfy. "To account for this, we often use a blend of reduced-fat and fat-free varieties," says Vanessa Johnson, Test Kitchens director.
11. Use egg substitute in recipes that call for more than one egg. A quarter cup equals one egg, cutting 5 grams of fat and 213 milligrams of cholesterol from your recipe.
12. Increase low-calorie ingredients. For example, add extra vegetables to casseroles and fruits to breads, muffins, or snack cakes. This will increase the yield of your recipe without adding fat.
13. Finely chop nuts, bacon, olives, and other high-fat or high-sodium ingredients. They will distribute more evenly, allowing you to use less without sacrificing taste.
For meats and vegetables
14. Opt for leaner meats, such as center-cut or loin meats and skinless, white-meat poultry. "For example, a slice of center-cut bacon has slightly less sodium and fat than regular cured bacon," Downie says. In some cases, pork can be a leaner option than chicken.
15. Add zing with citrus. A squeeze of fresh lemon juice can help brighten the flavors of veggies and meats without added sodium.
For sautéing
16. Use nonstick pans and cooking spray in place of oil or butter.
17. When you need oil, use canola, which has nearly half the saturated fat and more healthful, unsaturated fat than other oils.
For soups and stews
18. Opt for low-sodium broths and no-salt-added tomatoes; always rinse canned beans in a strainer under cold water, which cuts sodium by up to 40 percent.
19. Puree vegetables to add body. For example, mash some of the beans in a chili or the potatoes in a chowder.
20. Trade 1 percent milk for whole, or half-and-half for heavy cream, in creamy soups.

Howdy from Aggieland!!

I'm Paige, 25, and I recently moved to College Station, Texas home of Texas A&M, where I do marketing for a non-profit that helps minorities and kids from bad socioeconomic situations get into Texas A&M. Yes, everyone really does say Howdy down here, it's something I've had to adjust to. :-). Anyway, you can find my other blog at http://bikedown.blogspot.com

Some quick background, I started the weightloss journey in 2004 when I weighed around 200 pounds (I'm only five feet tall). I successfully got down to 148 using South Beach and working out regularly. But then I panicked. I've always been the sweet fat girl and losing the weight started to make me feel like I was losing who I was. So crap foods started making their way back into my life, then the move added stress (and more food) to it all. I went back up to 164 in November of 2006.

I recommitted in December and was lucky enough to find this challenge, so I signed up. Last Wednesday I joined a Gold's Gym. My eating plan is like WW Core, only I'm not writing everything I eat down. That just doesn't work for me. My January goal is to work out 4 times a week, hoping to make it a habit again. I have an exercise class later today. I'm currently at 157.5 and would hope to get to the low 130's overall.

I love to ride bikes, I own both a road bike and mountain bike. My schnauzers (Porter & Paxil) are like my kids, I was in a 9 year relationship but some recent issues have put the brakes on that(read my other blog for that). I have a fondness for piggy banks, reading, and watching all types of movies.

Good luck ladies, we can sooooo do this.
